  1. Vegan Gluten-Free Mac ‘n‘ Cheese. This recipe is above all, simple. It comes together in about 1 hour (including roasting the garlic), and requires 8 simple ingredients. I’ve been eating mostly gluten-free lately, and in doing so I’ve discovered the pasta brand Bionaturae, which I’m completely smitten with.
  2. The best Gluten-Free Baked Macaroni N Cheese is the perfect creamy and cheesy pasta dish that’s a family favorite and kid-friendly recipe. The recipe uses a combination of cheeses to create a deliciously creamy cheese sauce and layers of cheese make for a rich and delicious dish.

There are a few substitutions that work well for the flour including corn starch, tapioca starch/flour, and all-purpose gluten-free flour. Whole milk/half and half. This baked macaroni and cheese recipe calls for 3 cups of liquid dairy. I prefer full-fat dairy products because it makes this dish incredibly creamy.

Ingredients:

1 box of gluten-free elbow pasta

almond milk

cheese of your choosing (I used regular aged cheddar, white aged cheddar, and parmesan) - shredded

Cheese

paprika, salt, pepper

Gluten Free Baked Southern Macaroni And Cheese

Bob’s Red Mill Almond Flour

eggs

Directions:

  1. Start by cooking your gluten-free pasta according to the time and instructions on the box.

  2. While it’s cooking, in a separate saucepan, start your cheese sauce by heating your almond milk and adding in your shredded cheese, salt, pepper, and paprika. I used about 1 cup of milk, 2/3 cup of regular aged cheddar cheese, 2/3 cup of shredded parm, and 1/3 cup of white aged cheddar cheese. Stir consistently until it reaches a creamy, sauce-like consistency and the cheese is melted through. You’re going to want the sauce to be on the thicker side so that it can help to hold the pasta together.

  3. Combine and toss your cooked and drained pasta with the cheese sauce and transfer the mixture to a parchment lined baking dish - mine was 8x8. Spread the Mac and cheese mixture evenly in the pan and place in the freezer until solid.

  4. Once firm, preheat your oven to 400 and take the pasta out of the pan and cut it into squares with a warm knife.

  5. Then, set up your “breading” station by filling one bowl with almond flour, salt, pepper, and paprika and a second one with beaten eggs.

  6. Dredge the squares in egg and then coat thoroughly with the almond flour, placing them onto a parchment lined baking pan.

  7. Bake at 400 for about 15-20 minutes depending on your oven and then broil for a few extra minutes.

Gluten Free Mac and Cheese is just the comfort casserole you're craving. This gluten free version will really make you smile.

Comfort food is called comfort food for a reason. For me gluten free mac and cheese is one of my favorites. I have a recipe that I absolutely love for gluten free one-pot, no-drain macaroni and cheese, but sometimes I just really want creamy cheesy noodles with crispy buttered breadcrumbs on top.

When I was about 8, I had an auto-immune illness that had me sick for several months. I still remember that moment when I finally felt good enough to eat. Of course I went right to my favorite comfort foods!

One of the first things that sounded good to me was macaroni with my mom's homemade cheese sauce. I remember eating those 'cheesy noodles', as we call them in our home now. Nothing beat finally feeling like a kid again! I remember I was running around and playing with my siblings as I left the dinner table after finishing a plate of homemade mac and cheese. One of my favorite memories!

My mom's homemade cheese sauce is super easy to make, and it is even better when you load the sauce and noodles into a casserole dish and top them with toasted breadcrumbs, butter, and of course MORE cheese.

Something else that I love about this gluten free baked macaroni and cheese is that you can really add whatever cheese is your favorite. Usually I use straight up cheddar, with maybe a little Monterrey Jack to make it a bit more gooey. You can even add a bit of cream cheese!

Just make sure whatever cheese you add is grated (or cut into small cubes if it is too soft to grate) and turn off the stove before you add it. Just let the residual heat in the sauce gently melt the cheese. Adding the cheese this way helps to prevent it from curdling, separating, or doing any manner of funky stuff. The cheese also melts better if you grate it yourself, then it isn't covered in that anti-caking powdery stuff which can cause aforementioned funky stuff to happen.
